Recipe of Motuleño eggs

Ingredients (2 p.):

  • 4 eggs
  • 4 corn tortillas
  • 200 g of refried black beans
  • ½ scallion
  • 1 male banana
  • 1 slice of cooked ham
  • 100 g cooked peas (peas)
  • 200 g homemade tomato sauce
  • 50 g of fresh cheese
  • olive oil
  • Salt

Preparation of the recipe Motuleños eggs:

Chop the scallion and roll it in a pan with a drizzle of olive oil. Incorporate refried beans. Season, stir and let it cook for a few minutes. Reservation.

Peel and cut the sliced ​​banana and fry them in abundant olive oil until they are roasted and crispy on the outside.

Pass the tortillas through the same oil a few seconds to soften and drain on absorbent paper.

Spread the tortillas with the beans. Fry eggs and place them on top. Season them. Bathe them in the homemade tomato sauce hot. Add the diced ham, peas and grated fresh cheese on top. Accompany with the banana slices. Season with a pinch of salt. It serves.
