Recipe Rice with black pudding and garlic mayonnaise

- 400 gr. of rice
- 1 rice sausage
- 1 onion
- 1 green pepper
- 2 leeks
- 1 carrot
- 6 green asparagus
- 1 head of garlic + 1 tooth
- meat broth
- 1 egg
- extra virgin oil
Preparation of the recipe for rice with black pudding and garlic mayonnaise
Chop the onion, carrot, green pepper and leeks. Put the vegetables to be poached in a wide saucepan with a splash of oil. Season and let them cook over moderate heat for 15-18 minutes.
When the vegetable is well poached, add the rice and sauté well and season with the paprika. Wet with the hot broth (double and a little more liquid than rice). Season and let it boil on high heat for 5-6 minutes.
Remove the skin from the blood sausage, cut into slices and fry in a pan with hot oil until golden brown. Place the garlic head in the center of the casserole and place the fried blood sausage on the turn. Enter in the oven at 180º C. for 18-20 minutes. After this time, remove the pan from the oven and cover it with a clean cloth and let it sit for 5 minutes.
Shell the egg and pour into a whisk glass, add a clove of rolled garlic, a pinch of salt, a dash of vinegar and a glass of oil. Insert the blender all the way down and start beating without moving the bottom arm. When the mayonnaise begins to emulsify, move the mixer to mix everything well. Serve the rice and accompany with a little mayonnaise. Garnish with a sprig of parsley.
It is convenient to cut the black pudding into small slices and pass them by flour so that when frying it does not break.
The green asparagus, together with the rest of vegetables constitute a fabulous contribution of dietary fiber and substances with activity antioxidant. It is a recipe with high energy intake so it is recommended to moderate the ration ingested and accompany with a very light second dish.
